This Guernsey milk cheese is produced at Upper Canada Cheese in Jordon, Ontario, just outside of Niagara. A highlight of production is the rock salt and water wash, giving this cheese a sharp bite.
Aged for 2 years to salty, nutty perfection, it's very rich and buttery and would be fabulous served with an oaked Chardonnay.
