Mothais a la Feuille is a goat's cheese hailing from the Poitou-Charentes region of western France, originating in Mothe-Saint-Héray and dating back to the 19th century.
In 2002, the cheese was granted an AOC designation to ensure its quality is upheld. Fresh goat milk is used to make this cheese which matures in a humid environment, enclosed in a chestnut, sycamore or plane leaf coating. It has a soft, runny texture which thickens with age, developing intense earthy, lemony and mouldy flavours. Its rind is wrinkly with blue and green mould underneath the leaf shell, and has been injected with Geotrichum to bring out the distinct goat milk flavour.
